It really depends how protective/cautious/paranoid you want to be. For trusted internal environments, perhaps no encryption is best, since it will maximize performance. If you are going to have remote developers, and are very concerned about your data being intercepted, use higher encryption. Just keep in mind that your remote users may have a slower connection (especially from home), and may complain about slow performance if you're enforcing the highest level of encryption.
There is no standard "good mix". It all depends on preference vs. performance.
